Earth Day Smoothie Bowl
We made this smoothie bowl in honor of Earth Day. While we are all stuck at home right now, it can be a fun time to get in the kitchen and make some things you wouldn’t normally make! While we make smoothies often, beautifully decorated bowls like this one are a less frequent occurrence. Yesterday by daughter asked when we were going to do a mother-daughter date to our favorite local smoothie shop (which is closed right now), which pretty much broke my heart. I knew she was looking for a special moment just the two of us, so we brought the smoothie shop to our house, made a fancy smoothie bowl, and ate it together. It’s the little things, right? Looking forward to more mother-daughter dates both in the house and out of the house soon (hopefully).
The blue color of the smoothie is from blueberries and a small scoop of blue spirulina. I tried the blueberry alone first but, despite their name, blueberries can often make the smoothie more purple than blue. Thankfully I had a small bottle of spirulina with a slightly blue hue in the fridge. Not only is spirulina helpful for making foods an exciting shade of blue or green without artificial dyes, this superfood is a great source of calcium, protein, and absorbable iron. All great reasons to keep some powdered spirulina on hand for adding into smoothies! To get the color and texture how we wanted it (you want a thicker smoothie when make a bowl), we started by making a nutritious smoothie that was extra thick and white in color. Then once we were happy with it, we slowly added in some blueberries and then the spirulina.
Base Ingredients:
1 large banana, frozen
1/2 cup of cauliflower rice, frozen
1 Tbsp of collagen peptides (optional)
2 Tbsp hemp seeds
1 cup of hemp milk (more as needed)
2 Tbsp organic wild blueberries, frozen
1/2 tsp of spirulina
Topping ingredients:
1 kiwi, halved and sliced
handful of fresh blueberries
unsweetened coconut shavings
optional honey drizzle for sweetness (not pictured)
Directions:
Blend all base ingredients together, except for blue berries and spirulina (you may need a tamper or additional liquid). Add blueberries and spirulina until you reach your desired blue hue.
Transfer to your reusable bowl of choice (it’s Earth Day after all), and decorate with toppings!
